Slow Cooker Herby Chicken

I love my slow cooker during the winter and I decided to have a look through my recipe books a few nights ago to find some new recipes to do in it. This is quite simple but really tasty and makes life so much easier on the days I have work as all I needed to do was cook some pasta and serve it up.

Ingredients (serves 4)

  • 4 chicken breasts, diced
  • 2 peppers
  • 1 onion
  • 10 or so baby plum tomatoes
  • 2 tsp of Very Lazy Garlic
  • 1 tin of tomatoes
  • 2 tsp of dried mixed herbs
  • Water
  • 4 tbsp of tomato puree
  • Pinch of black pepper


Chop your peppers and onion into 2cm squared pieces, cut the tomatoes in half and put them all in your slow cooker. Heat a frying pan in a medium-high heat and spray with frylight, once warm put in the garlic and chicken. When the chicken has started to brown sprinkle a tsp of the mixed herbs in and coat the chicken with them. Continue to cook for a couple of minutes then transfer the chicken and garlic to the slow cooker. Add the tinned tomatoes then fill the can halfway with water and add that too. Add the rest of the herbs, the tomato puree and the pepper to the slow cooker dish and mix well. Set the cooker on low and leave it for 6 hours to do its thing. 

Serve with pasta or whatever you fancy and enjoy!
