Mr is on late shifts this week so I ate on my own once the kids had gone to bed tonight. This was a total experiment made from the random bits left in my fridge and cupboards and it actually turned out to be pretty tasty! It is basically the filling for a pie but obviously pastry is far too synful! Mine was served with cauliflower rice as I’m on an SP day but it would go pretty well with mash.
- Ready cooked chicken
- 6 closed cup mushrooms, sliced
- 1 leek, sliced
- 150ml of chicken stock
- 2 tsp of Mayflower chicken gravy (or similar, syn accordingly. I said 1 syn for mine)
Spray the bottom of a small saucepan with Frylight and let it heat up. Add the mushrooms and leeks and let soften for a few minutes. Add the chicken and mix it all together then add the stock and stir. Slowly add the gravy powder, mixing thoroughly. Bring to the boil then let it simmer for about 10-15 minutes until thickened.
